2 sticks butter, softened
1 cup packed dark brown sugar
1⁄4 cup white sugar
1 package (2.8 oz.) instant vanilla pudding
1 1⁄4 teaspoons vanilla
2 1⁄4 cups white whole wheat or
1 teaspoon baking soda
1⁄8 teaspoon salt
1 1⁄2 cups chopped chocolate or chocolate chips
Preheat oven to 375 degrees. In the bowl of an electric mixer, cream together the butter and sugars until smooth. Beat in the vanilla, vanilla pudding mix and eggs. In a smaller bowl, combine the flour, baking soda and salt. Beat the dry ingredients into the creamed mixture. Fold in the chocolate chips. Drop spoonfuls of the cookie mixture on a parchment lined or lightly greased baking sheet. Bake for 14 to 15 minutes until golden and edges are just slightly brown. Yields 32-36 cookies.
* Use 1 cup of oil instead of butter and pareve chocolate for a pareve version.
