Easy Asian Cole Slaw With Chow Mein Noodles And Sesame Dressing



4 tablespoons oil
3 tablespoons sugar
3 tablespoons light soy sauce
1 tablespoon rice vinegar
1 clove garlic, minced
1 teaspoon toasted sesame oil
1⁄2 teaspoon fresh ginger, minced
2 tablespoons toasted black or white sesame seeds

1 package cole slaw mix
3 scallions, thinly sliced
1⁄2 small red onion, thinly sliced
11⁄2 cups Chinese chow mein noodles


In a small saucepan, combine the oil, sugar, soy sauce, vinegar, garlic, sesame oil and ginger. Cook for several minutes over medium heat, stirring continuously, until sugar has dissolved, about 2 minutes. Allow to cool and then add the sesame seeds and mix well. In a large salad bowl, combine all the slaw ingredients. Toss with the dressing and serve immediately. Serves 8-10.
